Tortiglioni are one of the many variations of maccherone, one of the oldest formats born in Naples. Their name, of course, refers to the format and is derived from the vulgar Latin tortilla, which literally means to wrap yourself in a spiral with a characteristic design of the lathe. They are a particularly versatile and at the same time original format that traditionally prefers full-bodied spices. Tortiglioni are ideal with juicy meat-based ragu. Also good with tomato sauce or vegetable and tomato sauces. It is a particularly suitable format for baked cakes.
